Scandinavian rice pudding with berry jelly

Ingredients

1 kg rice porridge, bought or homemade
300 ml whipping cream
50 g chopped almonds (optional)
2 tsp Dansukker Vanilla Sugar
150 ml Dansukker Multipurpose Jelly Sugar

Jelly
500 g fresh or frozen berries, e.g. cherries, raspberries or strawberries
250 ml Dansukker Multipurpose Jelly Sugar
500 ml juice (diluted) – select the same flavour as the berries

Instructions

Mix jelly sugar and porridge in a pot and bring it to the boil. Stir in vanilla sugar and almonds. Allow to cool. Beat the cream stiff and pour it into the porridge.

Pour the mixture into a serving bowl. Allow to cool. Put the berries on top of the porridge.

Bring juice and jelly sugar to the boil and let it boil for 30 seconds. Pour the juice over the berries.

Store in the refrigerator until serving.
